Sunny Side Up Breakfast

My favorite breakfast after my morning run at the beach.

Simple, simple but so delicious, easy and fast to prepare, specially when there is no much time in the morning, but in need of a very nutritious breakfast, packed with all nutrients to start your beautiful day.

INGREDIENTS

  • 1 tablespoon olive oil

  • 3 eggs or 2 (your choice)

  • 1 cup fresh spinach

  • 1/2 tomato

  • 1/2 cup broccoli

  • kosher salt and freshly-ground black pepper

INSTRUCTIONS

  1. Heat olive oil in the pan on the stove low flame. Add the spinach.

  2. Crack the eggs on top of the spinach. Be careful not to brake the yolk

  3. Cover with a lid,

  4. Cook for about 5 minutes or until the eggs whites are cooked.

  5. Place the eggs on the serving plate .

  6. Slice the tomato and place it on the plate

  7. Place the cooked broccoli.

  8. Seasoned with salt and pepper.

  9. Enjoy with your morning coffee or tea.


RECIPE NOTES

For the best flavor use farm eggs from your Malibu neighbors or free range from your local market.

Make ahead: The broccoli can be prepared the day before and stored in airtight containers for 2 days in the refrigerator.
