Perfect recipe for the winter season, filled with taste, served with white rice and fresh tomato to balance the strong savour of the lamb chops.
Wonderful for entertaining because is easy to prepare.
2 tablespoon olive oil
3 lamb chops
2 cloves garlic , minced
1 bunch of italian parsley
1 bunch of cilantro
1/4 cup of basil
1 cup of rice rinsed
1/2 choppped onion
2 cups of chicken broth
1 roma tomato sliced
kosher salt and freshly-ground black pepper
Rinse and pat dry with a paper towel the lamb chops, and remove all the extra fat .
Seasoned with salt and black pepper, set aside.
Let’s prepare the pesto sauce:
Blend the parsley, cilantro, basil, and garlic, then add slowly the olive oil until you get a soft paste seasoned with salt and pepper, set aside.
Let’s prepare the rice:
Sautee the chopped 1/2 onion and 1 clove of garlic, add the rice, stir, until dry then add 2 cups of chicken broth, let it boil then simmer for 20 min or follow the rice package instructions.
Heat the grill, add oil when hot, place the lamb chops, grill it for4-5 min. each side.
On a serving plate, place the lamb chops and pour some of the pesto sauce over it, on the side serve a scoop of rice and the sliced tomatoes
You can serve it with mashed potatoes or roasted potatoes and any vegetable of your preference.
Do not over cook the lamb chops, serve it hot, best if you grill them just before you are ready to eat..
