Roasted Brussel Sprouts w/Turkey Bacon

Brussel sprouts are one of my favorite vegetables with a nutty flavor. This dish is a tasty veggie side for any meal, nicely roasted, prepared with turkey bacon, but you can prepare it with pancetta as well. I love to serve this delicious recipe as a side dish for Thanksgiving dinner - it’s always a hit with my friends and family and tastes great with a roasted Turkey!

INGREDIENTS

  • 1lb. brussel sprouts

  • 1 cup turkey bacon

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1 tsp white pepper

  • 1/4 cup chopped parsley


INSTRUCTIONS

  1. In a large pot with water, boil the brussel sprouts for about __ minutes or until fully cooked.

  2. Strain the water from the brussel sprouts and let them cool in a bowl.

  3. Season with some salt, pepper and olive oil.

  4. Place the sprouts in a baking pan and broil until roasted for about 10 minutes.

  5. In a pan over medium heat, fry the chopped bacon until crispy.

  6. In a serving pan, mix the roasted brussel sprouts with the turkey bacon and garnish with some chopped parsley.
